VitaPro® Nisin is a natural polypeptide antibacterial food preservative produced by the fermentation of Lactococcus lactis subsp lactis.  It is used to inhibit a wide range of gram-positive bacteria and is particularly effective against the heat resistant spore forming bacteria such as Bacillus spp and Clostridium spp. In the United States VitaPro® Nisin is permitted in sausage casings with a maximum dosage of 126mg/lb in finished product. In ready to eat cooked meat and poultry products the maximum dosage is 100mg/lb.


  • For solid foods it should be diluted in a distilled water solution  and evenly mixed through out the food.
