RennPro®  is a new generation of microbial rennet extracted from a pure strain of Rhizomucor miehei, non- pathogenic. When added to milk, RennPro® Microbial rennet produces the casein enzymatic cleavage, resulting in the transformation into cheese. The activity in rennet enzymes is measured by the IMCU International Milk Clotting Units. In other words, the higher the IMCU the higher the activity.

RennPro® Microbial rennet improves the activity of certain dairy starter cultures (Streptococcus thermophilus and Lactococcus spp) reducing the inoculation dose, and regularizes acidification curves. Its use produces a better syneresis and due to the different evolution of curd in vat, the grain remains more permeable and lactowhey drains better.
