Chymozyme® Fermentation produced chymosin (FPC) is a nature-identical calf chymosin (Considered vegetarian friendly) produced by the fermentation of Kluyveromyces lactis. The absence of bovines pepsins helps create more effective yields. Chymozyme® contributes to more favorable dosages as well as the retention of cheese texture over the shelf life of the product. Chymozyme® improves cheese texture and is more suitable for slice ability and also minimizes loss. It is  is used in the coagulation for all types of cheese.
