Yogurt & Kefir Series

LyoPro® Yogurt cultures are composed of strains that contribute to acidifcation time, aroma, mouthfeel, structure and viscosity and have an incubation temperature for yogurt at around 100-109°F (38 – 43°C)

Traditional Yogurt Strains include:
Streptococcus Salivarius subsp. thermophilus • Contributes to fast acidfication time and to add flavor
Lactobacillus delbrueckii subsp. bulgaricus • Contributes to flavor, texture and preservation.

Nutritional strains / Probiotics
Lactobacillus acidophilus 50 billion CFU
Bifidobacterium bifidum 100 billion CFU
(Other strains available upon request)

The Kefir starter is composed of cultures that contribute to acidfication, aroma, flavor and texture. The optimal incubation temperature range for Kefir is around 77-95°F (25 – 35°C)

Lactococcus lactis subsp. lactis •Contributes to acidification
Lactococcus lactis subsp. cremoris • Contributes to acidification
Lactococcus lactis subsp. lactis biovar diacetylactis • Contributes to CO2 production that is responsible for aroma and flavor
Streptococcus Salivarius subsp. thermophilus • Thermophilic culture used to speed up acidfication time and to add flavor
Leuconostoc mesenteroides subsp. cremoris • Contributes to CO2 production that is responsible for aroma and flavor
Kluyveromyces marxianus • A yeast that contributes to Kefir’s typical characteristics
