LyoPro® Thermophilic Series

LyoPro® Thermophilic Series is composed of high heat thriving cultures and has an incubation temperature of 95-113°F(35 – 45°C). Thermophilic cultures can produce Italian and Swiss Style soft and hard pressed cheeses.

Streptococcus Salivarius subsp. thermophilus • Contributes to fast acidfication time and to add flavor
Lactobacillus delbrueckii subsp. bulgaricus • Contributes to acidifcation and can promote proteolysis during ripening
Lactococcus lactobacillus helveticus • Contributes to acidifcation, can promote proteolysis during ripening and can influence a nutty like flavor in cheeses that go through longer periods of ripening
