LyoPro® Ripening & Mold Series is used in the production of soft lactic cheese like Brie, Camembert, & Roquefort (Blue Cheese) style cheeses. With the help of enzymes they contribute to the breakdown of proteolysis and lipolysis resulting in the formation of flavor and consistency.

Geotrichum Candidium • Contributes to white, cream colored, flat yeast like mycelliums and flavor
Penecillium Candidium • Contributes to white cream colored appearance, along with typical flavor components
Penecillium Roqueforti • Contributes to the development of dark blue green veins, piquant taste and creamy consistency of the cheese due to enzymes which develop during its growth
