Freeze-dried dairy cultures are the heart of fermented milk and cheese products. LyoPro® dairy cultures have been biotechnologically selected and formulated to give specific characteristics including acidification, aroma, gas, and proteolysis. The LyoPro® Series is composed of the following:

Mesophilic Series are used for the production of fermented milk products, fresh cheese, soft cheese, semi-hard cheese, continental cheese, hard cheese and butter.

Mesophilic & Thermophilic Series are blends of mesophilic & thermophilic strains that are known for faster acidication times and can produce semi-hard to very hard pressed cheeses like Cheddar cheese.

Thermophilic Series is a range of cultures that are used for the production of pasta filata mozzarella/pizza cheeses  and hard cheeses like Grana and Parmesan type cheeses.

Ripening & Mold Series are mold cultures that are used in the production of soft lactic cheese like Brie, Camemebert, & Roquefort (Blue Cheese) style cheeses.

Yogurt & Kefir Series are composed of a variety of yogurt starters and a kefir starter. These starters contribute to acidifcation time, aroma, mouthfeel, structure and viscosity.

Specialty Culture Series are additive cultures and is composed of bioprotective cultures inhibit the growth of yeasts and molds, nutritional strains known as  probiotics,  & propionic cultures which during ripening greatly influence the typical taste and large eye formation for cheeses like Emmental Gruyere & Jarlsberg.
